Join Domencia Marchetti for a virtual tour of Italy and regional Italian food at The Inns at St. Albans! As the author of seven acclaimed books on Italian home cooking, Domenica has made it her mission to bring authentic Italian recipes into the homes of America’s cooks and is excited to bring this same passion into the kitchen at the Inns and to share it with you.

During this custom designed weekend, we will focus on the food of one of Italy’s least known regions and Domenica’s favorite—Abruzzo, where her family is from. Situated east of Rome, Abruzzo extends from the Apennine Mountains to the Adriatic coast. It is a spectacular, unspoiled region with rich and diverse culinary traditions.

The weekend will focus on mastering pizza and pasta- Abruzzo-style.  We begin on Friday with a welcome reception then hands-on class time where to begin the pizza dough making process followed and learn the secrets of homemade pasta for spaghetti alla chimaera with Abruzzese meat ragu.  Friday’s Welcome Dinner at the Inns, featuring homemade pasta from Abruzzo and other specialties of the region.

On Saturday, after morning class time, we’ll venture to The Hill, St. Louis’s Italian neighborhood, for a walking tour and lunch with stops at select groceries and bakeries.  The afternoon is dedicated to the art of pizza making, Abruzzo style. In this hands-on class, we will roll up our sleeves and make homemade pizza dough, plus a variety of toppings then learn to bake the pizzas in a wood-fired pizza oven.

Recipes featured during this weekend are:

  • Spaghetti alla chitarra with Abruzzese meat ragu
  • Pizza dough variations
  • Cooking pizzas in wood-fired pizza ovens.
  • Jam Crostata

Throughout the weekend, books will be available for purchase and signing, and on Sunday, join Domenica for an Italian farewell breakfast and a lesson in preparing jam crostata before departing.
