International Choux Co., the cooking school of The Inns at St. Albans, presents an exciting slate of culinary classes taught by award-winning cooks, bakers, food professionals and best-selling authors. Our CookINN Classes are intimate and immersive experiences centered around a theme and led by a visiting chef. Attendees can choose from demonstrations, excursions, talks and tastings and purchase classes a la carte or bundled in any combination.
Our name pays homage to Oscar Johnson, co-founder of the International Shoe Company, and his wife Irene Johnson, the visionary who cultivated St. Albans’ beauty and tradition of hospitality throughout the early 20th century.
November 11-12, 2022: Italian Weekend
WITH MARY ANDINO
While one often thinks of Italian cuisine as just one type of food, in reality, the country’s gastronomy greatly varies depending on which of its 20 regions you find yourself in. Come explore the different regions’ approaches to food and learn techniques and ingredients necessary to create an authentic Italian meal. With a focus on preparing fresh, quality ingredients in a simple way that allows their flavors to shine, we’ll spend the weekend exploring the cuisines of Florence, Sicily, Sardinia, Southern Italy and Venice. We’ll also delve into a bit of Italian history and culture along the way.
ABOUT THE INSTRUCTOR – Mary Andino
Mary Andino is the Managing Editor of Feast Magazine. She also works as a freelance writer and editor and is passionate about farmers and sustainability. She received her PhD in Italian history from Washington University in St. Louis and loves to share her knowledge of Italian food, culture and history with others.
Friday, Nov. 11 CookINN Classes with Mary Andino
Lunch and Learn – $55/person. 12 to 2 p.m.
Join our guest chef for a class where she’ll demonstrate – and students indulge in – the delicacies of Florence, including crostini toscani (chicken liver pate), prosciutto and melon salad, and pesto con farfalle. A dessert and a wine pairing from the region will round out the experience.
Tavern Creek Happy Hour and Appetizer Demonstration – $45/person. 6 to 8 p.m.
Sicilian cuisine is the focus of this fun event. Observe Andino creating two appetizers – a caponata (tapenade made with eggplant, tomatoes, olives, capers, served on top of crostini) and a scaccia (thin dough rolled and baked with cheese, tomatoes, and basil) – while sipping on a Negroni. Sample these delicious bites while enjoying the company of other guests and our visiting chef.
Saturday, Nov. 12 CookINN Classes with Mary Andino
Morning Chef’s Experience – $45/person.
Join us for an intimate presentation by Mary Andino on the history of Sardinia followed by a tasting of traditional Sardinian cheeses.
Afternoon Demonstration Class at International Choux Cooking School – $65/person. 2:30 to 4:30 p.m.
Join Mary Andino for a peek into the food of Southern Italy … and a sample of what’s to come at our Al Fresco Dinner later that evening! Gather around the International Choux Co. kitchen for demonstrations of scratchmade gnocchi with amatriciana (tomato-based sauce with onion, garlic, and pancetta) and a dessert of pistachio and almond cake with orange salad.
Evening Al Fresco Dinner – $100/person. 6:30 p.m.
Join Andino and guests in the Grove outside of our cooking school to enjoy a night in Venice! Sip on some wine or bubbles followed by a signature cocktail that pairs perfectly with the featured menu. A three-course al fresco dinner will have you clamoring for the canals and cuisine of this special city.
