International Choux Co., the cooking school of The Inns at St. Albans, presents an exciting slate of culinary classes taught by award-winning cooks, bakers, food professionals and best-selling authors. Our CookINN Classes are intimate and immersive experiences centered around a theme and led by a visiting chef. Attendees can choose from demonstrations, excursions, talks and tastings and purchase classes a la carte or bundled in any combination.

Our name pays homage to Oscar Johnson, co-founder of the International Shoe Company, and his wife Irene Johnson, the visionary who cultivated St. Albans’ beauty and tradition of hospitality throughout the early 20th century.

Artisan Bread

July 15-16, 2022: Easy Artisan Breads

WITH JUDITH FERTIG

With a bowl of no-knead artisan dough in the refrigerator, you are ready for any meal. Pat out a savory flatbread for happy hour, shape and bake baguettes for dinner, or roll out dough to bake Neapolitan pizzas in the outdoor pizza oven. These sessions present us with an opportunity to see, learn and taste the magic just four little ingredients can create!

ABOUT THE INSTRUCTOR – Judith Fertig

Judith Fertig is an award-winning and bestselling cookbook author, specializing in baking, barbecue and the regional cuisine of the Heartland, where flavor and storytelling combine. After college at Wittenberg University and Ohio State, she studied at École de Cuisine La Varenne (formerly in Paris) and The Cordon Bleu in London plus The Iowa Writers Workshop. Her food and lifestyle writing has appeared in The New York Times, The London Sunday Times, Country Homes & Interiors, Bon Appetit, Food & Wine, Natural Awakenings, Better Homes & Gardens, Saveur, Country Living, Fine Cooking, and Eating Well. Fertig has appeared on the Food Network and many TV and radio programs.

Author of Easy Bread: 100 No-Knead Recipes, Fertig also wrote 200 Fast & Easy Artisan Bread Recipes; I Love Cinnamon Rolls; The Gardener and the Grill; Patio Pizzeria; and Red, White, and ‘Que. The Back in the Swing Cookbook won an IACP Award. Prairie Home Cooking was nominated for both the James Beard and IACP Awards. Currently, she writes for IN Kansas City Magazine and Eating Well and blogs at www.alfrescofoodandlifestyle.blogspot.com. Fertig’s novels include The Cake Therapist and its sequel, The Memory of Lemon, which won the Kansas Notable Book Award in 2017.

Lunch and Learn – $55/person

Enjoy a demonstration class, signature cocktail and lunch in our new cooking school with our visiting chef/author.
12 p.m.

Tavern Creek Happy Hour and Appetizer Demonstration – $55/person
Relax in Tavern Creek Tavern or enjoy the fires outside on the patios while sipping signature cocktails and sampling heavy appetizers. Our guest chef demonstrates two appetizers that you can easily replicate for your own guests while sharing their culinary story.

Saturday, July 16 CookINN Classes with Judith Fertig

Afternoon Demonstration Class at International Choux Cooking School – $65/person
Sit back and soak in culinary tips and techniques from our guest chef in our new state-of-the-art cooking school. Perfectly curated, you will enjoy a signature cocktail and a demonstration of what’s to come that night for dinner.

Classes are individually priced (see above). Please call 636-458-0131 for the discounted price for all three sessions and to reserve your bundle of classes.

No refunds for cancellations. With a minimum 72 hour cancellation, we will issue a credit for the amount paid toward a different class in the future for up to 1 year from the cancellation date.
