CookINN Classes
at International Choux Co.

International Choux Co., the cooking school of The Inns at St. Albans, presents an exciting slate of culinary classes taught by award-winning cooks, bakers, food professionals and best-selling authors. Our CookINN Classes are intimate and immersive experiences centered around a theme and led by a visiting chef. Attendees can choose from demonstrations, excursions, talks and tastings and purchase classes a la carte or bundled in any combination.

Our name pays homage to Oscar Johnson, co-founder of the International Shoe Company, and his wife Irene Johnson, the visionary who cultivated St. Albans’ beauty and tradition of hospitality throughout the early 20th century.

June 17-18, 2022: Foraging Edibles


One of the many joys of nature is learning about plants, their relationship with one another and how they benefit us. Join Chef Jeff Ross in a fun and informative series of CookINN classes to glean nutritional and medicinal knowledge and peace from the nearby forests and fields. We will hike nearby trails and learn about wild edibles and how they may be brought back to the kitchen to craft useful and tasty dishes, resulting in a fuller understanding of our ancient surroundings.


Chef Jeff Ross, who grew up in East Tennessee, likes to call his native region “Chlorophyll Central” for its diversity of native plants. Spending many years as a professional gardener, he naturally moved toward the culinary world, where he teaches the connections between the food we eat and the plants all around us that comprise it. With an education and keen interest in history, he sees a story in every leaf, flower and root we harvest – and in each bite of them we take.


Friday, June 17 CookINN Classes with Jeff Ross

Lunch and Learn – $55/person
Chef Ross leads a demonstration of a simple lunch that attendees will then enjoy.
12 p.m.

Tavern Creek Happy Hour and Appetizer Demonstration – $35/person
Using foraged ingredients, Chef Ross creates a signature cocktail and appetizer for his audience. Guests can mingle with the chef afterward, while enjoying his creations.
6 – 8 p.m.

Saturday, June 18 CookINN Classes with Jeff Ross

Morning Foraging Hike – $45/person
Join Chef Ross for a two-hour hike along one of our trails where we will hunt for wild edibles.
10 a.m. – 12 p.m.

Afternoon Demonstration Class at International Choux Cooking School – $65/person
Chef Ross offers a glimpse of what’s on the menu for that night’s al fresco dinner and demonstrates how to prepare a selection of the dishes using ingredients sourced on our trails.
2:30-4:30 p.m.

Evening Al Fresco Dinner – $100/person
Join Chef Ross and guests in the Grove outside of the cooking school to enjoy a signature cocktail and al fresco dinner.
6:30 p.m.

Classes are individually priced. The discounted price for all five sessions is $295 per attendee. Please call 636-458-0131 to reserve the all session bundle.

No refunds for cancellations. With a minimum 72 hour cancellation, we will issue a credit for the amount paid toward a different class in the future for up to 1 year from the cancellation date.
