Now operating out of a historic building just steps from Head’s Store, the sleek, modernized space housing the International Choux Co., the cooking school of The Inns at St. Albans, is now open for a full slate of culinary classes and experiences. And ready for the camera!

The completely overhauled space once known as “Pomp’s Chapel” boasts a striking white and grey color palette (plus a fun rustic red island in the store section), top-of-the-line appliances like the black stainless ZLINE gas range, and a large central island offering as many as 8 students a front-row seat for cooking demonstrations.

Beautiful wood beams, wood-lined doorways, high-gloss, textured backsplash tiles and a flood of natural light add to the venue’s visual appeal. “It’s truly remarkable to see how far this space has come and then think about all the culinary learning that will happen within it,” says Datra Herzog, owner of The Inns at St. Albans. “Our inaugural class, led by artisan chef Jeff Ross who hails from the mountains of Tennessee and enlightened participants on so many things in and outside of the kitchen, was an incredible success, and I expect future classes to reach capacity quickly.”

The beloved chef returns to our kitchen again in June for a series of Friday and Saturday sessions focused on foraging edibles. Space is limited, so be sure to sign up now.
