The International Choux Company offers culinary classes taught by award-winning cooks, bakers, food professionals and best-selling authors. Our weekend cooking events are immersive experiences, each custom designed to give students the opportunity to master new skills, explore new culinary traditions and discover local producers and artisans. Weekend camps and classes include a mix of hands-on cooking, demonstrations, excursions, talks and tastings.

Our name pays homage to Oscar Johnson, co-founder of the International Shoe Company and his wife, Irene Johnson, the visionary who cultivated St. Albans’ beauty and tradition of hospitality throughout the early twentieth century.



Our primary classroom can accommodate up to 16 students for hands-on classes.  Located within the historic Old Barn Inn campus, just steps away from our beautifully landscaped patio with access to our wood-burning hearth oven, Potager, outdoor theater and covered pavilion.

Where are you located?

The Inns at St. Albans and the International Choux Company are at 3519 St. Albans Rd, St. Albans, Missouri, 63073.

Do you have a shuttle service from the airport?

We do not currently have an airport shuttle.  We recommend that you rent a car, Uber, or Taxi to 3519 St. Albans Rd, St. Albans, MO.

Can I stay at The Inns at St. Albans when I attend a Culinary Camp?

Yes, we can offer you a range of accommodation options to fit individual or group needs.  Contact us to arrange for accommodations and reserve a spot in our cooking school or, purchase an all-inclusive ticket online and someone from The Inns will contact you with accommodation options. Accommodations options include:

  • Old Barn Inn Cottages – 4 private cottages each with 1 Queen bed, sitting area and private patio.
  • The Studio Inn – 2 private Queen Suites and 2 Double Queen Suites are available in this historic bed and breakfast home.
  • Farm House Inn – 1 private King Suite and 1 Double Queen Suite is available to rent separately in this newly renovation bed and breakfast home. The entire Farm House Inn can be reserved for a large group, in addition to the 3 bedrooms, a bonus room with two twin beds is available in a whole-home rental enabling sleeping for 8.

What's Your Cooking School Payment Policy?

Payment is required to secure your position in class. We accept all credit cards, along with Inns at St. Albans gift cards. If you wish to pay by check or cash, please contact us.  Please note that 5% of the class tuition in non-refundable in the event that you need to cancel.

What's Your Cooking School Refund Policy?

Cancellations more than 30 days before the class will receive a full refund minus the 5% registration fee.  Cancellations between 29-14 days of the class will receive a credit, minus the 5% registration fee, that can be used for a future cooking school class.  Cancellations less than 14 days before the class are nonrefundable.

What's Your Cooking School Cancellation Policy?

In the event that your class is canceled due to bad weather, low enrollment or other circumstances, we will notify you as soon as possible by email and issue you a full refund.

Can I take photos or record the cooking classes?

Cameras are allowed during the weekend to capture memories or to record recipe details but no video recordings are allowed during class time including hands-on cooking and demonstrations.  Please silence mobile phones in the classroom, on tours and during meals.

Can children attend cooking classes?

No infants or children under 16 are allowed in the classroom.  Children aged 16 and up are welcome.  We do not offer discount registration prices for children between the age of 16-18.

Do you do private events at the Cooking School?

We are available for private classes, events and team building exercises.  We’ll work with you to design a program that will fit your group’s needs.  To schedule a class, please contact us.

What if the cooking class is full? Do you have a waitlist?

Our waitlist registrations are free.  If a cancellation occurs 30 days or more before a class, we will contact people listed on the waitlist in order, you have 48 hours to respond and must make payment in full to secure your spot.  If a cancellation occurs less than 30 days before the class, we will e-mail the entire waitlist at once and admit the first student to reply.

Agree to Release from Liability

With the purchase of your cooking school class(s) you agree to release and hold harmless The Inns at St. Albans, LLC and its members, employees and agents, from and against any and all claims and/or liability for any injury suffered while participating in an Inns at St. Albans cooking event/class.

I understand that my participation in this event/class is voluntary. I recognize and understand that culinary classes have inherent risks and hazards and that my participation is solely at my own risk, and that I assume full responsibility for any resulting injuries, illnesses, and damages.

I also give my consent for full and unrestricted use of my image and/or voice, for use by The Inns at St. Albans, LLC for promotional purposes and in all media. All such representations of every kind shall remain the property of The Inns at St. Albans. I acknowledge that I have carefully read this release and hold harmless agreement.

Registering for a The Inns at St. Albans class will automatically opt you into our email list to receive class schedules and special events at our property. You can opt out at any time by clicking the “unsubscribe” link at the bottom of any email.
