In honor of the Snow Moon, we’re welcoming you for a warm up in the kitchen with Chef Nate Hereford! The accomplished chef whose career has taken him to renowned kitchens all over the country will teach two culinary classes at International Choux Co. on February 12. Come for lunch or dinner, riveting demonstrations and expert insight into crafting meals that wow. AT THE INNS AT ST. ALBANS

In honor of the full snow moon, you’re invited to elevate your kitchen prowess at International Choux Co., the cooking school of The Inns at St. Albans, with guest chef Nate Hereford. At both of his lunch and dinner sessions, Hereford – owner of area favorite Chicken Scratch – revisits his days in the fine dining space with a menu that’s innovative yet approachable. Attendees partake in sips and a light meal throughout the instruction.

Dinner guests can add an overnight stay to their visit! The Snow Moon Stay Package includes two dinner tickets and overnight accommodations at The Lodge.  More details below.

ABOUT THE INSTRUCTOR: Owner, chef and operator of Chicken Scratch, Nate Hereford’s journey to the fast-casual arena originated in fine dining. Having worked at establishments in Chicago and San Francisco as well as Niche in St. Louis where he served at executive chef, Hereford’s rotisserie chicken concept still showcases his attention to detail and focus on flavor. A native of Beverly, Massachusetts, who graduated with a degree in anthropology from the University of Vermont then pursued his culinary education in Oregon, Hereford loves the freedom his current passion project gives him to take time off for family vacations but still dabble in hosting intimate private dinners and collaborating on large events.
